Bright, even, pale yellow with some depth. This has a complex, full bouquet with aromas of flint, struct-match, savoury lees elements underlying ripe stonefruit and citrus. Full-bodied, the palate is complex yet vibrant, aromas of stonefruit, citrus preserve enriched by flint and barrel spice, savoury lees, contributing subtle almonds, puff pastry nuances. Excellent acidity persists and cuts through the multi-layered richness of secondary elements, providing strength and length to the creamy palate. Barrel fermentation details of flint, struct-match are well-proportioned, complimenting the yeasty autolysis and subtle development of spice and nutty notes. This is an intriguing, complex barrel-fermented Sauvignon Blanc with great balance and precision. Match with pesto & goat’s cheese risotto and roasted quail over the next 5-8 years.

This wine showcases aromas and flavours of wild flowers and heirloom citrus fruits, fresh apple and white blossoms. The core of SBs fresh herb signature unfurls nicely on the palate and is enhanced with flavours of pineapple and lees, fresh citrus and some peach moments. Lovely refreshing acid line and a silky texture touches the palate through the tasting. Well made and quite delicious with a lengthy naturally flavoured finish. Best drinking from today and through 2025+.

Our Philosophy

As the Roman Empire spread, so did the evolution of viticulture around Europe. Vineyards were created in the best locations and wines were made using only the basic ingredients.

The Clericus wines are crafted with the same philosophy of using grapes from the most premium sites and using only nature to ferment the wines. Each wine is made to represent both the sense of place and also the origin of the grape itself. Only once the wine is in perfect balance will it be bottled and left to age slightly before being released.

 

Winemaking

Individual rows are chosen by hand and each parcel of fruit is carefully selected and kept separate throughout the winemaking process to preserve the unique flavours. Indigenous fermentations and time on lees allow subtle earthy flavours and a lovely texture to develop. The wines are rich and complex with a perfect amount of oak used in every wine to compliment the style.
