We can’t say we tried a lot of Noble Pinot Gris but this was much admired. Pale in colour it has lovely orange blossom aromas with oranges again prevalent in the palate. Sweet and unctous, it works both on its own and with dessert.

Fully botrytised fruit barrel-fermented with over 350 g/L rs, this wine blended with the regular Pinot Gris wine to 10.4% alc. and 165 g/L rs. Bright, light golden yellow colour with good depth, pale on edge. The bouquet is softly full with a deep and dense core of marmalade, wild honey and showing a subtle nuttiness. Lifted tropical fruit aromas and rich botrytis abound. Very sweet, this is very soft and rounded on palate, with marmalade, discreet tropical fruits and honey harmoniously filling the palate with unctuous textures. This is very luscious and near decadent in its oiliness, the acidity appears low, adding to the breadth and weight. The flavours flow to a very long, thickly textured finish. This is a soft, decadent, unctuous and harmonious dessert wine that will match steamed puddings and creamy, caramel dishes over the next 4-5 years. 300 dozen made. (375 ml)

An irresistible sweet wine showing lifted aromas of marmalade, honey, tropical fruit and potpourri. The palate is beautifully sweet and richly flavoured with perfectly balanced acidity, providing lovely balance to the gorgeous sweetness.
Viticulture
Late in the season it became apparent that a small amount of botrytis was developing. We decided to leave a few rows just to see what would happen. Luckily the weather played its part by bringing a little moisture followed by warm drying winds once a week. These climatic conditions were perfect for the development of Noble Rot. Once harvest arrived, every bunch was infected and had shrivelled to such a point that only the delicious nectar of concentrated grape juice was left. The harvest brix was 50!
Winemaking
Once the honey like juice was pressed off the skins, it was put into barrels and yeast was added. The fermentation was slow because of the extreme amount of sugar concentration. After 3 weeks of fermentation, with roughly 350+ g/l of sugar left, the barrels were racked into tank and blended with our normal Pinot Gris to help create balance. The resulting blend, with 165 g/l of residual sugar, has beautiful viscosity and texture.
