Our classic Upper Awatere Sauvignon Blanc is fresh and herbaceous with a backbone of chalky acidity.  The harsh climate and rugged conditions craft our wines to be well structured. With the right amount of care in the winery our Sauvignon Blanc delivers power with the perfect amount of finesse and complexity.


Though only a single block, we divide the vines and the way they are managed into separate parcels depending on the soil type. Flavours are manipulated by the way the vines are trained and ultimately the final blend will speak of the terrain more so than treating every vine the same.


Winemaking is kept to a minimum and the fruit is treated retrospectively to continue the work done in the vineyard.  Yeasts and ferment control is chosen to reflect the quality and condition of the fruit.  Over 95% of our Sauvignon Blanc is fermented in stainless steel tanks and depending on the season up to 5% is fermented in barrel.  Through extended lees contact and barrel work we are able to consistently develop well structured and textured wines.
